Happy [Canadian] Thanksgiving to you all! I hope in the midst of 2020, you all found something to be grateful for; family, friends, God, home...
I'm also grateful for food. And I made this peach cobbler for my family as a dessert to the unconventional tomahawk steaks that my mom will be making later.
It's easy and very southern, enjoy!
5-6 peaches, peeled and sliced
2 cups white sugar, divided
1 cup all-purpose flour
1/2 cup salted butter
1 cup milk
1 tbsp baking powder
1/4 cup water
pinch of salt
pinch of nutmeg
cinnamon
Melt the butter in a 13x9 baking dish.
Combine peaches, 1 cup of sugar, and water to a boil on medium-high heat, softening the peaches and making a peach-syrup.
Combine flour, 1 cup of sugar, baking powder, salt, and a tiny pinch of nutmeg. Mix thoroughly.
Add milk to the dry ingredients and stir until even. It will look thicker than you think it should, but it's fine. — Pour evenly into the buttered baking dish.
Disperse the peaches over the batter but do not stir. Sprinkle with cinnamon.
Bake at 375° for 40-45 minutes, or until golden brown. Drizzle some remaining peach-syrup overtop the cobbler once pulled out of the oven.
Serve with vanilla ice cream, and add more cinnamon if you want!
OPINION
You can also use a tbsp of lemon juice for the peaches, instead of water.
TIP
If you're making the cobbler ahead of time, you can reheat it at 350° for 10-15 minutes.
